Souvlaki

For the souvlaki, I started by marinating 24 pieces of boneless chicken thighs in soy sauce, brown sugar, pepper, ginger and garlic. After a couple of hours of marinating, with my fathers help I cooked the chicken on the barbecue. After the chicken was finished on the grill, I made a different version of a greek salad, combining yellow peppers, tomatoes, cucumbers, red onions and a vinaigrette. Next, I put the pita from Eugene’s in the microwave for 45 seconds to make it soft and ensure it would not break. After, I spread a thin layer of tzatziki from Eugene’s on the pita and added slices of chicken and the greek salad, then sat down to enjoy.

– 1 cup of soya sauce                      – 1 yellow pepper                      – Oregano

– 2 cloves of garlic                          – 2 medium tomatoes              – Salt

– 1 teaspoon of ground pepper     – ¼ of a red onion                     – Pepper

– 1 tablespoon of ginger                  – ¾ of an english cucumber     – Olive oil

– 4 tablespoons of brown sugar                                                         – Lemon juice

This recipe was taken from my parents. Growing up this was one of my favourite meals that they prepared. Although souvlaki is a very original dish, the greek salad that I made was slightly different. I removed the feta cheese, and the olives, since I did not have either of the ingredients in the kitchen. The most time consuming part of the recipe was making all of the various components (the chicken, the salad and the vinaigrette for the salad). I was glad my father helped me on the barbecue, otherwise the chicken most likely would have been chard or undercooked. The vinaigrette on top of the salad added an acidic texture that brought out the flavour of the dish. Overall, the taste of the souvlaki was very good, but next time I hope to add feta cheese and olives to make a more traditional greek salad, with better nutritional value.

    Yum! Pita wraps or Greek wraps are one of my favourite meals. My mom used to make them anytime we had company over and it was always a hit. I haven’t made it since I’ve been here because for whatever reason peppers and chicken cost so much and I’m a tad bit broke haha. After seeing this though I might have to!

    Yummy in my tummy! Greek on the street and Maria Souvlaki are intimidated! I’m, personally, a big fan of chicken so I was happy to see this recipe included that! A little change of pace from the classic beef and pork seen.
