White Chicken Chili

White Chicken Chili

For the white chicken chili, I started by heating onions and garlic in olive oil over medium heat. After the onions and garlic had cooked for about 4 minutes I added the chicken broth, cumin, paprika, coriander, oregano, cayenne pepper, salt, pepper, and a jalapeno pepper. I then covered the pot and let the broth simmer for about 12 minutes. While the broth simmered I rinsed red kidney beans and put them in the food processor to make smaller pieces. Using a fork I also shredded the cooked chicken into pieces. Next, I added the beans, corn, shredded chicken and cream cheese to the broth and let it cook for another 20 minutes. After 20 minutes I put the chili in a bowl and topped it off with a cut avocado and tortilla chips. 

Ingredients:

– 1 yellow onion

–  1 tablespoon olive oil

– 2 cloves of garlic

– 1 jalapeno pepper

– 1 ½ teaspoons of cumin

– ½ teaspoon of paprika

– ½ teaspoon of  oregano

– ½ teaspoon of coriander

– ¼ teaspoon of cayenne pepper

– salt 

– pepper

– 1 pack of cream cheese

– 1 ¼ cup of frozen corn

– 1 can of red kidney beans

– 1 cooked chicken

– 1 avocado

– handful of tortilla chips

This was my first time making white chicken chili and it was great! This recipe was a little bit more time consuming than the recipes I have made in the past, but it was a lot of fun to make and my girlfriend (Anna) helped a ton! This recipe was taken from cooking classy and the ingredient measurements were spot on. The only thing we changed was rather than using chilies we used a jalapeno pepper. This recipe was a great balance between healthy and tasty. The beans, chicken, and cream cheese contained great sustenance and richness. I have always enjoyed a good bowl of chili; however, I usually have found the beans to be too big and overpowering; therefore, using the food processor to cut the beans into smaller pieces made a big difference. The only thing I would change for next time would be using a more ripe avocado. The one I had on my chili was slightly under ripe, making it a little hard to chew. Otherwise the recipe was great!

  1. Hi Isaac! This soup looks unreal. It reminded me of this soup that my Aunty made all the time when I was still at home. It was a loaded tortilla soup and it was amazing. It had a lot of the same ingredients such as corn, red kidney beans, shredded chicken, avocado, and most of the spices you used too. Anyways thanks so much for sharing I will have to try to recreate this soup next!

    I just recently made chili chicken as well! I had never had it before let alone made it and it was a bit of a process… Our recipes look really similar except I used white beans instead of red. Looks scrumptious though!

    Hey Isaac! This white chicken chili looks amazing! I haven’t tried chicken chili before, but it looks so good! Even though the recipe was time consuming, I’m glad it turned out great and that you had help from Anna! Cutting the beans into smaller pieces was also a smart way to change the recipe to your liking!
