For the stuffed squash I started by cutting a spaghetti squash in half and removing the guts. Next, I put olive oil and pepper on the squash and put it on a baking sheet in the oven to cook for about 45 minutes. While the squash was cooking I cooked the bulgur in 1 cup of water on medium heat for about12 minutes. Then took it off the heat and left it to the side. In a large pan over high heat I added olive oil, onions and garlic and cooked them for about 5 minutes. Next, I added the cumin, coriander, chili flakes, salt, turkey and tomatoes. Stirring this frequently for about 7 minutes. After that, I added cilantro, mint and bulgar. I removed the squash from the oven and added the turkey mixture and topped it with cheddar cheese. I placed the stuffed squash back in the oven for another 20 minutes to melt the cheese. Finally, it was removed from the oven and using a big metal spoon it was scooped into a bowl and I sat down to enjoy it!

This recipe was taken from “Simple Recipes” and it is meant for stuffed peppers; however, I have only seen it used for stuffed squash. This recipe is one that my parents usually make about once a month because it is tasty, relatively quick to make and has high nutritional value. My favourite part of the recipe is the minimal clean up. Since all of the ingredients are put in the squash, there are less dishes and the squash can be composted after. The combination of turkey and fresh vegetables made for a very complete and filling dish. For next time the only thing I would change would be to make the yogurt sauce that accompanies the recipe. The website has a mint yogurt sauce that goes on top of the stuffed squash that is very good.
